Italian Chicken Spedini
SERVES
2 PEOPLE
INGREDIENTS:
6 boneless, skinless chickn breast halves, pounded out to be about 1/4 inch thick
2 cups Italian seasoned bread crumbs
1/2 cup grated Romano cheese
1/2 cup grated Mozzarella cheese
1/2 cup olive oil
4 garlic cloves chopped small
1 Tbsp. fresh minced parsley
3 cups Cascone's Lemon Garlic Marinade
6 Metal or wooden skewers
Salt & Pepper to taste
STEPS:
STEP 1 : Mix together bread crumbs, cheeses, salt, pepper, parsley, and garlic
STEP 2 : Place chicken on foil.
STEP 3 : Add bread crumb mixture on to chicken that has been dipped in olive oil, then roll chicken breast and secure with toothpicks; insert on skewer.
STEP 4 : Place on broiler rack 5 inches below flame and broil 5 minutes until golden brown. Turn and boil another 5 minutes.
Repeat until done.
STEP 5 : Top with Lemon Garlic Marinade
